Brown Sugar Courgette Cake

So, this cake is really easy and healthy (’cause it has loads of courgette, right…?)

Brown sugar courgette cake

3 Eggs
2.5 dl rape seed oil
450 g of sugar (I used 300 g brown sugar, 100 g white sugar and 50 g of light syrup)

First: whisk these 3 ingredients for approx 5 min. Then add the following:

350 g grated courgette
300 g all purpose flour – sifted
3 tsp ground cinnamon
2 tsp vanilla sugar
1 tsp salt
0.25 tsp baking powder
2 tsp baking soda
100 g nuts (I used 20 g chopped unsalted pistachios and 80 g unsalted sunflower seeds)

Bake in a preheated oven at 180 degrees for 1 hour.
